We brewed the new IPA, in which we used the Norwegian Kveik yeast, in cooperation with the flying brewery černý potoka. The juicy fruit profile full of pineapple, peach and tropical fruit is the result of a combination of aromatic hops and the specific character of fermentation.

Kveik yeast is a rediscovered treasure in the Scandinavian and Baltic regions, the centuries-old tradition has almost disappeared and survived only thanks to the original farming families who remained brewing the traditional Nordic Farmhouse Ale. Cultures that are based on bread yeast and local microflora, vary from farm to farm, and some beers use their fermentation to impart such a rich fruity taste that no additional ingredients or hops are needed. European laboratories have been working with these farms for the last few years to create cultures for use in breweries.

With our good friend Vašek Vomáčko from the černý potoka brewery we created a recipe for a juicy New England IPA, which uses a less pronounced Kveik strain, but thanks to its extremely high fermentation temperature it influences cold hop processes and creates an extremely fruity and infinitely drinkable taste.
