Berlin-based brewery Schneeeule Brauerei has become a symbol for ressurection of traditional authentic Berliner Weisses for many and rightly so – the head brewer Ulrike Genz decided she would collect old literal sources and yeast from decades old beer bottles alike. Since 2016 she ha been creating Berliner Weisse using mixed culture of Saccharomyces, Lactobacillus and Brettanomyces, making her beers carry an authenticity that noone really comes close to in Europe.
