We used all of the hops mentioned above with a lightly different idea of how they should translate into the beer. We used Simcoe in a smaller volume in the early boil to utilize its elegant bitterness, that stands as a counterweight to the extreme fruitiness brought by other hops. Columbus addition in the whirpool creates light tones of resin and citrus typical for old-school IPAs. Beloved Mosaic entered both into whirpool and dry-hop, adding its famous juicy character of tropical fruits. The cornerstone of Tastes Like Summer is Citra LupuLN2, cryo version of the famous hop, making it 40-50 % more potent thanks to a unique process using deep freeze. Cryo Citra adds an extreme juiciness into the brew. We used it together with the noveau Strata in the dry-hop. Strata adds a wilder and exotic character with notes of resin a light bitterness. With this New England IPA, we took a completely opposite approach from our Single hop range. We used a diverse combination of hops – Mosaic, Citra Cryo, Strata, Colombus and Simcoe. The result is a complex fruity character with the best qualities of all the chosen hops.<\/p>\n
