This is because it is a relatively healthy fruit with a high content of vitamins C and A; and a significant amount of vitamins B1, B2, B3 and Potassium. In one pint of our new sour, you will find around 80g of extracted rose hip, so it is definitely not a homeopathic amount.<\/span><\/p>\n<p><span data-contrast=\"auto\">We make our line of fruit sour twelves using the kettle sour method. This means that we first inoculate the wort with a pure culture of lactobacilli, which creates lactic acid through its activity and thus lowers the PH, similar to, for example, the production of kefir. When the required level of acidity is reached, the lactobacilli are eliminated by further boiling. Then we ferment the beer again, this time with standard brewing yeast.
