Finally, cafes can offer teas, lemonades and snacks, made from an ingredient that until recently was mostly simply thrown away. The impossibility of processing this waste due to the rigidity of European bureaucracy has thus been an obstacle for roasters who want to make coffee more sustainably and process more than the grain.
