This is a new world where the English ale tradition and ingredients typical of the American West come together. It is the &#8220;C hops&#8221;, which have been bred at the foot of the Cascade Mountains in the state of Washington with ideal hop-growing conditions, that became pivotal for the style. The 1980s and 1990s were the era of bitter resinous and citrusy IPAs, nicknamed the &#8220;IBU wars&#8221; due to their extreme bitterness.
