This means that we first inoculate the wort with a pure culture of lactobacilli, which produces lactic acid through its activity and thus lowers the pH, similar to the production of kefir. When the required level of acidity is reached, the lactobacilli are then eliminated by further boiling. The beer is then fermented again, this time with standard brewer&#8217;s yeast. At the end of the frementation, large amount of fruit is added. Sometimes the proverbial brewer&#8217;s luck comes to us. Most recently, when our brewers got the wrong tanks and accidentally pumped chokecherry puree into our sour flagship, Sour Passion Fruit.
