But we&#8217;ve taken it on a trip into the botanical realm and created Herbarium 12 &#8211; a gose that smells of fresh herbs and citrus notes.<\/p>\n<p>First, we acidified the wort with kettle souring to get a fresh acidic base. We added dozens of pounds of fresh lemongrass to the kettle, which adds a distinct citrus line to the beer. To this we threw in fragrant lemon thyme and juniper for a subtly spicy, aromatic character.<\/p>\n<p>And because a proper gose can&#8217;t be without salt, we added sea salt &#8211; just the right amount to bring all the flavours together and create a complex but incredibly drinkable experience. Herbarium 12 is a beer that will refresh the body and mind, whether you enjoy it in nature waking up after a winter&#8217;s sleep, or whenever you crave a truly original beer experience.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>An herb garden in every sip!
