A day of fresh hops is very busy; we always coordinate the batch with the harvest so that the hops travel from the plant to the beer for a maximum of a few hours. It is therefore a matter of close communication with the farmer, who tells us early in the morning “today I harvest.” We then start brewing the batch so that the addition of hops to the beer almost coincides with its arrival. Hopping with fresh wet hops is a great experience, where the whole process is accompanied by an incredible aroma. The use of heads requires an extraordinary amount of hops, and thanks to the properties of hop cones, you will lose a significant part of the wort. But the resulting taste is a real consolation for all that work. Harmonie is a more modern Czech hop, which was introduced to the market in 2004 and was created as a cross between the Czech hops Premiant and Saaz together with the English hop Northern Brewer. Its character is defined by balanced bitterness and high aromaticity, which combines pleasant floral notes with a pinch of citrus.
