We decided to brew a special beer for you this winter for your New Year’s toast. We drove to Karlštejn, where we collected severel hundred liters of wine juice from the Winemaking Research Station and mixed it with a Brut IPA base hopped with New Zealand Nelson Sauvin hops and German Hallertauer Blanc. The resulting beer is pleasantly fruity, super dry, sparkling and very drinkable.

Brut IPA is a modern beer style that uses enzymes to create an extremely fermented body. This results in an absolutely dry beer with almost zero residual sugar, which, thanks to the large amount of biotransformed hops, still shows a relatively full body. In our interpretation, we also used grapes from this year’s record-breaking Czech harvest. There is such an abundance of grapes this year that the Karlštejn winemakers were really grateful to us for taking some with us. In the New Year’s Roséčko (Czech abbreviation of Rosé), you will find St. Lawrence grapes, which convey a beautiful grape taste, which goes perfectly with the grape expression of the Nelson Sauvin and Hallertauer Blanc hops.
