Gose is a historic beer style with roots in Germany, known for its saltiness and light acidity. But we’ve taken it on a trip into the botanical realm and created Herbarium 12 – a gose that smells of fresh herbs and citrus notes. First, we acidified the wort with kettle souring to get a fresh acidic base. We added dozens of pounds of fresh lemongrass to the kettle, which adds a distinct citrus line to the beer. To this we threw in fragrant lemon thyme and juniper for a subtly spicy, aromatic character. And because a proper gose can’t be without salt, we added sea salt – just the right amount to bring all the flavours together and create a complex but incredibly drinkable experience. Herbarium 12 is a beer that will refresh the body and mind, whether you enjoy it in nature waking up after a winter’s sleep, or whenever you crave a truly original beer experience.
