The day of the fresh hops batch is very eventful, we always coordinate the batch with the harvest so that the hops travel from the plant to the beer for a maximum of a few hours. It is therefore a matter of close communication with the farmer, who tells us early in the morning “today I harvest.” We then start brewing the batch so that the addition of hops to the beer coincides with its arrival. Hopping with fresh wet hops is a great experience, where the whole process is accompanied by an incredible smell of fresh cones. The use of whole cones requires an extraordinary amount of hops for a lager, and thanks to the properties of hop cones, you will lose a significant part of the beer. But the resulting taste is a real consolation for all that work.
Saaz Shine is a modern variety registered in 2019, whose task was to become a suitable alternative for lagers lighter in flavour. It thus has a very pleasant balanced aroma with relatively low bitterness. This has helped it become a popular variety with some foreign big brands. We really want to get the most out of Saaz Shine and that’s why we used a large amount of it in fresh form in the whirlpool.
