Sorachi Ace is a hop with fairly interesting history. In the 70s, Japanese beer giant Sapporo Breweries decided to cultivate a more bitter version of Saaz, so they took Saaz and cross-bred it with English Brewer’s Gold. The result wasn’t exactly what they hoped for, bitterness was higher, yes, but the flavour was deemed “too weird”. The hop came to obscurity and no one really knew about it for quite some time.
In 2006 it was released to the American market thanks to one farm specializing in obscure varieties. The hop is really similar to Saaz in its elegant bitterness thanks to saaz-like co-humulone levels, that’s where the sameness ends thou. The flavour of Sorachi is unique, you’ll feel tones of lemongrass, dill and coconut and you’ll either love it or hate it, everybody does.
