To create something truly unique, you need to abandon your established boundaries, so we did our best to approach this “hybrid” without any prejudice. The base saison aged for two years in two red wine barrels, then we added grape skins into one barrel and grape juice into the other, aged it for further 3 moths and then mixed together into a single stainless steel tank where we continued the aging for another 18 months. Finally we the beer refermented for 3 months in barrels before ending in front of you. A 4-year journey finaly came to an end.

A long time before there were any beer purity laws and before we had evolved a clear idea about what a beer is, there was a far more diverse world of fermented beverages, a world far less subdued. Grains, fruits, honey, any possible sources of fermentable sugars where broadly used separately or together and a wholy unique and authentic character had been developed for every region, every different production, often not possible to be imitated even by the same producer just a year later. One of the most crucial, yet marginal effort of modern brewing industry is to bring back some of this freedom, time before rules, when only things that restrained the flavour of your drink were your imagination, your skill, and the avilable ingredients. For our first wine and beer hybrid, we had chosen the Cabernet Moravia variety of red grapes, our domestic grape bred from the original Cabernet Franc from Bordeaux. The heavier character of this variety is smoothened out by the activity of wild yeast and bacteria, creating a pleasant rustic flavour, that might remind you more of a rose than a red wine.
Water,  barley malts, hop products.
Serve and drink chilled. Protect from frost and direct sunlight. Store up to 8 ˚C.
