In the summer, we teamed up with the Good Water Beer Cup homebrewing competition in Dobrá Voda by Křižanov in Moravia and offered the winner a batch on our technology. Unexpectedly, the competition was won by one of the few international competitors, Markku Leminen from Finland, who brewed an extremely thick imperial stout with cocoa beans, molasses and vanilla. This is our attempt to interpret this exceptional beer.

Taking a recipe from a small homebrew and executing it on a larger commercial brewing kettle is a fairly complicated process even under normal circumstances. In different scales the processes just happen differently. Beer is heated and cooled at different rates, fermented and aged at different rates, and fermentation takes place in completely different volumes and conditions. Some aspects of brewing goes more easily in small, some in large quantitites. Transferring the brewing of such a strong stout to our technology was one of the biggest challenges we’ve pulled off, and it’s created probably the longest brewing process we’ve had in the brewery. The result will undoubtedly be a different beer in its own way than the one Markku brewed to begin with. The variables involved in brewing a beer this strong are just too much. Still, we feel grateful to Markku that we had a chance to try and replicate his brilliant beer and that it forced us to try techniques we had never tried before. Also, we are very happy to be able to export this beer back to Finland, where it came from.

Serve and drink chilled. Protect from frost and direct sunlight. Store up to 8 ˚C.
