The history of Witbier reaches far back into the monasteries of 14th century Europe, where it was common to brew beer from locally grown grains and a mix of herbs known as “gruit”. As time flew by, Witbier (or Biére Blanche in French) has undergone a complex evolution, today is known as a light highly carbonated wheat beer with an addition of cilantro and orange peel. The specific yeast strain used for Witbier differs from its German cousin by adding a less banana estery flavour and more of a phenolic spicy impression.
