Prefix “Pastry” functions as a codename for a group of beers made to mimic a specific dish, mostly cakes, desserts or other pastry products. These products usually fuction as an equivalent of postmodern art in world of craft beer. Not unlike contemporary art, the aim of pastry beers is not to just brew a solid well defined product, but rather to push the boundaries of what a beer (or art) can be. It’s often very hard to believe, that what’s in your glass is still mostly just grains, hops, water and yeast.
Mango sticky rice is a dessert originally from Thailand and is now a staple of virtually all South and South-East Asia. It’s simple – just mango fruit prepared with sticky rice soaked in coconut milk. To mimic these flavors we used large amounts of modern aromatic hops and combined their mango-like character with actual fruits. To recreate the other part of this dessert we added rice, coconut, oatmeal and lactose, together they complete this recipe with authentic creamy, milky character and distinct coconut flavor.
